This week in Israel we celebrated “family day”. It's what used to be the Israeli version of Mother’s day and it's what turned into family day in the past few years. It's a day that always makes me think about my family.

I left my parents house when I was 17 years old. I moved out straight to college. Between my freshman and sophomore year was the trip that changed my life and more importantly my family life as I knew it. I came to Israel, met my then boyfriend and now husband and I never moved back home. I moved to Israel at the age of 21 and since then have been living without my immediate family.

Only one who has gone through what I did can understand what it means to live across the world from your family. I was always a very independent person, always knew I could depend on myself for whatever I needed, but as the years went on, I realized that as much as I could depend on myself, it's so much more comforting to be able to depend on those (three in my case) people who are bond to you with a bond that is unlike any other.

The years have provided me with a family of my own- two beautiful sons and husband. With everything I have of my own, I still desperately miss and yearn for the love of my parents and brother. I miss them on holidays, on birthdays, and even just on random days of the week when I could use a hug, or a favor without feeling like someone is doing you a favor.

My parents were recently here on their yearly visit and as much as I wanted to be the daughter who is spoiled and taken care of, when my parents are in my home, I take the place of the caregiver, the one who spoils and takes care of. One of the things that I know how to be best in terms of providing for my loved ones is obviously cooking, and from the time they arrived to the time they left, I showed them my love and appreciation through my cooking. I made them this soup and they were so comforted by it. My dad was so proud of the kind of cook I have become, and couldn’t stop kvelling over how amazing it was. I think what he was really saying was how amazing it was to be cared by, by his daughter.

I will probably never know what it’s like anymore to live by the people I care for the most, but at least I can hold on to the fact that when we are together, I can show them my love through my food.

למרק הזה יש טעמים עשירים ועמוקים מאוד בזכות הקצה היבש של הפרמזן ושימוש בביקון או חזה אווז. שני המוצרים מוסיפים עומק של טעמים שקשה להחליף. מהיום אני ממליצה לכולם לשמור את קצה הגבינה בדיוק למרקים כאלה ואם אין, אפשר לגרד כחצי כוס גבינת פרמזן לתוך המרק.

חומרים ל 6-8 מנות

2 כפות שמן זית

½ כוס (100 גר') בייקון או פאנצ'טה או חזה אווז מעושן

2 בצלים סגולים חתוכים לקוביות

2-3 גזרים חתוכים לקוביות

2-3 גבעולי סלרי חתוכים לקוביות

1 עלה דפנה

1 קצה של גבינת פרמזן

1 תפו"א חתוך לקוביות

1 פחית (400 מ"ל) עגבניות מרוסקות

6 כוסות ציר עוף/ירקות או מים

1-2 זוקיני חתוך לקוביות

½ ראש ברוקולי חתוך לפרחים קטנים

¾ כוס אפונה

1 כוס שעועית אדומה מבושלת

5 עלי בזיליקום

מלח/פלפל

להגשה:

בזיליקום קצוץ

פרמזן מגורד

צ'ילי חריף (לא חובה)

אופן ההכנה:

  1. בסיר גדול מחממים את השמן זית על חום בינוני. מטגנים את הבייקון עד שהוא שחום ופריך. מוסיפים בצל, גזר, סלרי, עלה דפנה וקצה הפרמזן ומטגנים קלות למשך 10 דקות.
  2. מוסיפים את תפוחי האדמה ומטגנים עוד 2 דקות. מוסיפים את העגבניות ומערבבים. מוסיפים את הציר/מים ומביאים לרתיחה (ללא מכסה). מנמיכים ללהבה בינונית ומבשלים 20 דקות.
  3. מוסיפים לסיר זוקיני, ברוקולי, אפונה, שעועית, עלי בזיליקום ומבשלים למשך 20 דקות נוספות. מתבלים במלח פלפל לפי הטעם.
  4. מגישים עם בזיליקום קצוץ, פרמזן מגורד וקורט צ'ילי גרוס.
