Fudgy Brownies

In order to make really good and gooey brownies, you have to follow to very easy instructions: 1. Use at least 50% cacao dark chocolate (can be found in every supermarket) and 2. Never bake brownies until they are totally cooked. The second instruction means that you have to throw out everything you knew about the toothpick in the center of the cake trick- here it's the opposite- the middle of the brownies should be shaky and not totally baked. If you over bake the brownies you will end up with just another chocolate cake (it's a matter of minutes that separates between winning brownies and another dry unsuccessful chocolate cake). Don't worry, you don't have to be glued to your oven. Twenty minutes into baking check the brownies- if everything is shaky then you'll need to bake them for another few minutes, but if the outside layer is firm but the inside seems a bit wobbly-you've got it! Crunchy Smashed Potatoes

I know that the name of this recipe isn’t particularly appetizing, but you’ve got to give this potatoes a chance- they are one of the best side dishes! The concept of the recipe is to cook the potatoes first in boiling water until they soften, and then to mash them by hand (in order to expand their surface area) and then finally to broil in them in the oven- they will come out especially crispy and tasty. If you planning to serve these potatoes as a side dish to a main course then the amounts listed below should suffice for 6 people, but if you are serving this recipe to people who prefer the side dishes (over the meat or chicken), then this recipe should be enough for 4 people, and maybe even less. Danya talks about her mom's oven which somehow miraculously produces crispy on the outside-soft on the inside potatoes. Every Friday night dinner at the Weiner family household, these potatoes make their appearance, and every Friday night someone asks Danya's mom- "how did you make them?"...

Flea Market- Expensive

I have lived and worked in the Jaffa Flea Market district of Tel Aviv for almost six years- I arrived after a trip to India and Jaffa for me was a continuation of the Indian ruggedness. Six years ago, the flea market was as I remembered it when I was a teenager- my friends and I used to take a bus from Rehovot (a suburb 30 minutes outside of Tel Aviv) to go shopping in the flea market. In the last three years things have really started to change. Like mushrooms after the rain, expensive boutiques have started to pop up in the flea market. The first boutique that opened, and the closest to my apartment is called- One Bedroom- and it opened up about six months ago. It is an eclectic beautiful store which sells designer clothes along with lovely house wares. Shai-li and I borrowed dishes from One Bedroom for several posts including- Chocolate, Almond Cookies, Biscotti, Glue Wine and Potato Salad. Vietnamese chicken and glass noodle salad

In the super trendy and popular Mitte district in Berlin there is a charming Vietnamese restaurant called "Monsieur Vuong". The menu is quite modest- with around six courses- but the small selection comes with compensation- each of the dishes on the menu are exceptionally tasty , the portions are generous, the service is exceedingly prompt and the prices are ridiculous (in a good way, especially for Berlin or Europe for that matter). My favorite dish of theirs is the glass noodle salad- a spicy dish with an abundance of flavors, textures and colors- that is also filling! The glass noodles and fish sauce can be found in Asian specialty markets, but may also be found in your regular supermarket in the Asian products section. Here is my version of this salad: Ingredients for 6-8 servings: For the salad: 1 bag (200 grams, 7 oz.) glass noodle, soaked in hot water for about 10 minutes. Use a very large bowl for this because the noodles come in a bunch and are nearly impossible to separate....

Levy Farm… by Danya

Yesterday I took my two year old son, Eviatar, on a fun day with Mommy. And where does a two year old go on a fun day with Mommy? Gymboree? The Zoo? Not really! We went to the Levy Farm in Telmi Yechial in southern Israel. Eviatar ate tomatoes straight from the vine, rode on tractor and wallowed in the mud between the beds of cabbage and broccoli- what fun! It's actually my second visit to the farm, but this time I got a special tour from Eitan- the main operator of the farm and the person in charge of pest control (I got detailed explanations about pesticides). So this is what Eitan explained to me: the farm was founded by Naomi Levy in the 1980's, and is located in Telmi Yechial, next to the Malachi Junction (in the southern part of Israel but only 40 minutes away from Tel Aviv). The farm exports cherry tomatoes to Europe. Besides tomatoes, the farm also specializes in the growing of pineapple, asparagus, snow peas (I bought some for home!), and long beans.
