It is known that human beings are creatures of habit. Psychology often explains this phenomenon as having to do with the brain finding comfort in the known, leaving room to discover new/different experiences. If that is the case than, for 12 years straight, my brain was free for lunch.
Every day for lunch, I ate a peanut butter and jelly sandwich, from the kindergarten through High School. Sometimes with crust, sometimes without; sometimes strawberry jelly, sometimes grape-but that iconic sandwich found its way into my lunch bag. This was definitely not the case of the lazy mom, which some of you may already be thinking.
A month and half ago, checking my Facebook feed, I discovered something new. Apparently it was National (US) Peanut Butter Day. Getting nostalgic for my upcoming visit to the US, I thought it would be fitting to make a grown-up peanut butter dish and this one popped right into mind.
These days I find myself trying to make my son a variety of different foods for lunch and dinner, making sure he doesn’t get bored of the same old food. It’s nice to be reminded that eating the same old sandwich for 12 years left my brain accessible to soak up other information. Looks like my kid is getting the same food for at least the next few days.
Peanut Sesame Soba Noodles
Soba noodles can be found in most supermarkets and specially stores. You can find soba noodles that are made of 100% buckwheat, making them gluten free (others are combo of buckwheat and flour). If you don’t have soba noodles, you can substitute for any long, thin noodle. I added a plain grilled chopped chicken breast to these noodles for a more wholesome lunch. The dish has so much flavor that if adding chicken, keep it lightly seasoned with only salt and pepper.
Ingredients for about 4 servings:
For the sauce:
½ cup smooth peanut butter
¼ cup soy sauce
⅓ cup warm water
1 tablespoon honey
1½ tablespoons fresh ginger, finely chopped
2 garlic cloves, minced
2 tablespoons rice vinegar
1 tablespoon sesame oil
½ teaspoon chili oil (optional)
For the noodles:
1 package (250 grams) soba noodles
2 medium zucchinis, halved lengthwise and finely sliced
¼ cup green onions, finely sliced, green and white parts
½ cup cilantro, finely chopped
2 tablespoons toasted sesame seeds
1 red chili pepper, finely sliced (optional)
- Place all ingredients for the sauce into a food processor and blend until smooth. Place in a large serving bowl.
- Cook noodles in a large pot of boiling water until tender. Drain and rinse under cold water.
- Place noodles, zucchini, green and green onions in the bowl with the sauce and toss until noodles are coated.
- Top with cilantro, toasted sesame seeds and chili pepper and serve.
