Lettuce and Munchies Salad

What do you do when guests arrive unexpected? Improvise. It happened to me a week ago, when really good friends of ours came over for a spontaneous visit. The fridge was almost totally empty- a few ripe tomatoes, half a log of goat cheese (which turned into a spicy Shakshuka-recipe in a post to follow), and a head of lettuce, because I always have fresh lettuce in the fridge.

When I looked for nuts to add to a salad in my pantry I found only a bag of Japanese Rice Cracker Snacks-known in Israel as Munchies. So I threw in a handful of the Munchies into a bowl of lettuce and hoped for the best. The munchies remained crunchy even after they were sitting in dressing, and the salad was crowned as the star of the night.

Ingredients for 8-10 servings:

  • 2 heads of lettuce (I recommend mixing two types, ) washed, dried, and torn
  • 1 cup seasonal fruit, cut into small cubes (try mango, peach, persimmon etc,)
  • 1 cup Japanese rice cracker snack

For the dressing:

  • ¼ cup olive oil
  • 2 tablespoons Balsamic vinegar
  • 1 tablespoon white vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon mustard
  • 1 teaspoon mayonnaise
  • 2 teaspoons honey
  • Salt and pepper

Preparation:

  1. Place the lettuce in a large bowl and sprinkle the rice crackers and fruit on top of the lettuce.
  2. Mix together all of the dressing ingredients and pour onto the salad and toss. Serve immediately.
